This is another one of my go-to recipes. It is so simple, but it makes it appears and tastes as if you slaved in the kitchen all day. There is never any of this dish that gets thrown out either, since it is just as good reheated for leftovers. This recipe is from a Campbell's Kitchen cookbook that I bought on the bargain rack while shopping with my mom and sister a few years back. In the same cookbook is another one of my favorite recipes, which I will be making tomorrow night and posting later this week so check back for it then!
1 jar spaghetti sauce, any flavor
½ cup water
1 pkg. (30 oz.) frozen cheese-filled ravioli
1½ cups shredded mozzarella cheese (or a bit more if you are a cheese lover like my husband!)
¼ cup grated parmesan cheese
Heat the oven to 375°. Spray a 9 x 13 baking dish with cooking spray. Stir the spaghetti sauce and water together in a medium sized bowl. Spread 1 cup of the sauce onto the bottom of the baking dish. Arrange half of the ravioli squares into rows on top of the sauce, filling the entire bottom of the dish. Next, sprinkle ¾ cup of mozzarella cheese over top of the frozen ravioli. Spread one more cup of sauce over cheese. Top with remaining ravioli and then sauce. Cover with tin foil and bake for 35 minutes. Uncover the dish and top with remaining mozzarella cheese, baking for 10-15 minutes longer. Prior to serving, garnish with parmesan cheese. Makes 6 servings.
I had this for dinner tonight. Super yummy. Noel was bummed when he found out it had no meat in it though. He still really liked it too, but next time we are going to add meat to our sauce! Thanks for sharing Bess :)
