Hawaiian Ham & Swiss Sliders

     Although these may not sound like anything special, they are not your usual ham and cheese sandwich that you take in your lunch everyday!  These are not exactly healthy, but amazingly delicious!  They are great as a snack or for dinner!  This is one of the recipes that got me addicted to pinterest and all of the greatness you can find on it!  I found this recipe from the blog Beyer Beware.

1 package Hawaiian Sweet Rolls (12 count)
1 onion, minced (of course I leave these out)
1 stick of butter (only use about ¾ stick if you omit the onions!)
3 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
3 tsp. poppy seeds
½ lb. shaved deli ham
6-8 slices Swiss cheese

     Melt the butter in a small saucepan.  If you so desire, add the minced onions.  Stir in the Dijon, Worcestershire sauce, and poppy seeds and simmer for a few minutes.  Preheat oven to 350°.  Line a 9 x 13 backing dish with foil.  Slice the rolls in half as a group, lengthwise.  Place the bottom half of the rolls on the foil.  Spread about ¾ of the butter mixture on the bottom half of the rolls.  Top the rolls with the ham and Swiss cheese slices.  Place top half of rolls on the cheese.  Spread the remaining butter mixture over top of the rolls.  Cover with foil and bake for 20 minutes.  For crispier rolls, remove foil and cook for an additional 2 minutes.

Fruit Salsa

     This is one of the first things I ever pinned on pinterest, and finally I have gotten around to making it!  In this case, better late than never because this stuff is delicious!  I made this with the intention of eating it for dessert tonight, but since the french onion soup recipe I attempted to make was garbage disposal worthy, I ate this for dinner instead!

3 kiwis, diced
2 golden delicious apples, peeled, cored, and diced
16 oz. strawberries, diced
8 oz. raspberries, cut into halves
½ tbsp. brown sugar
1 tbsp. sugar
2 tbsp. fruit preserves (I used raspberry, but strawberry would be good too)

     Cut up all the fruit and gently combine in a bowl.  Stir in the sugars and fruit preserves.  Serve with Stacy's Cinnamon Sugar Pita Chips (pictured to the right).

Mini Corn Dog Muffins

     Everyone in my family looks forward to the fair, mostly for all the corn dogs and elephant ears.  But as most of us know, its probably good for our waistlines that the fair only comes once a year!  However, these mini corn dog muffins are almost guilt free!  They also make the perfect appetizer or snack for a get together.

¼ cup butter
¼ cup unsweetened applesauce
½ cup sugar
2 eggs
1 cup buttermilk
½ tsp. baking soda
1 cup cornmeal
1 cup flour
½ tsp. salt
8-10 hot dogs (I used Hebrew National 98% Fat Free Beef Franks)

     Preheat oven to 375°.  Combine butter, applesauce, and sugar in a bowl.  Add eggs and whisk until well combined.  Stir in the buttermilk.  In a separate bowl, combine the rest of the ingredients except the hot dogs.  Stir the dry mixture into the wet ingredients, half the mixture at a time.  Whisk together until well combined.
     Spray a mini muffin pan with cooking spray.  Scoop a tablespoon of batter into each muffin cup.  Cut each hot dog into about 5-6 pieces.  Put a hot dog piece in each muffin cup.  Bake for about 10-12 minutes or until golden brown.  Makes 48 mini muffins (feel free to cut the recipe in half!)

Pizza Roll-Ups

     This is such a basic recipe you probably don't even need a recipe for it...but here it is anyways!  It is perfect as a snack or as a meal, whichever you prefer.  I found this recipe from Dinner with the Donnells.  I made it tonight for dinner since my husband was working and I didn't feel like making an elaborate dinner for myself!

Crescent Rolls
Pepperoni (I used turkey pepperoni)
String Cheese
Marinara (or ranch if you like that!)

     You can use any size can of crescent rolls, depending on how many you want to make.  You will need about 4 pepperoni slices and 1/2 a string cheese for each roll-up.  Separate the triangular crescent rolls.  Place 4 pepperoni slices at the top part of the crescent roll.  Cut the string cheese in half and place on top of the pepperoni slices.  
     Next you will need to roll up the crescent rolls, pulling each side up over the top to wrap it all inside.
     Bake at 350° for about 12-14 minutes, or until golden brown.  In the microwave, heat up a bowl of marinara sauce for about 30 seconds, or until warm.  Serve while still warm.  
     I only made 4 roll-ups, but you will probably want to make more because they are delicious!
